For as long as many Toulouse residents can remember, Le Poussin Bleu has been an integral part of Place Rouaix.
Founded in 1932, it has stood the test of time, constantly adapting to the times and preserving the quality of its cakes, chocolates and traditional skills.
Gaëtan Dupart, assisted by his wife, his children and his sales staff, work to offer everyone a traditional, fleshy pastry, rich in flavour and character, made from fresh, top-quality produce.
Moulds, hand whips, rolling machines, pastry bags and pans are the tools of choice for his pastry chefs, who accompany him day after day in his quest for authenticity.
Master chocolatier. This patisserie is an institution in Toulouse. A gourmet break is a must.
