Ramparts and books, on the road to Carcassonne
The city of Carcassonne is a fortified site that is unique in Europe and a UNESCO World Heritage Site. Criss-crossed by narrow, restored streets, the city is a must-see for visitors, giving them a chance to explore medieval life, the feudal era and Occitan culture. While you’re in the region, take the opportunity to head for Montolieu, a real literary town with no fewer than twenty bookshops, art galleries and a museum of the arts and crafts of bookmaking.

Tarn
Albi, UNESCO World Heritage
The Episcopal city has been a World Heritage Site since 2010. The steeple of Sainte-Cécile Cathedral dominates the city. Majestic and imposing, this red brick church takes visitors by surprise, its military fortress-like appearance jealously guarding an interior décor, which includes a splendid painted vault and sculptures that are well worth a visit. Just next door, the Palais de la Berbie, formerly the bishops’ palace, exhibits works by the major artist Toulouse-Lautrec. Its gardens offer uninterrupted views over the waters of the River Tarn.

Savour the specialities of the Armagnac region
Your first stop is Auch, capital of the Gers region, to sample the local specialities. Goose and duck are cooked as confit, cured duck breast or roasted. But the black Gascon pig, the apple croustade and the Gascon pastis are not to be outdone… These dishes are as generous as they are delicious and can be enjoyed in any one of the tow’s many restaurants. Extend your stay by going as far as Vic-Fezensac, in the Armagnac region, to taste the famous eau-de-vie, a real concentration of heavenly sweetness. For a bit of history, drop in at Lupiac, where the Musée d’Artagnan invites you to discover the life of the real Captain of the Musketeers.

Ariège
Breathtaking views of the snow-capped Pyrenees from Foix
Nestling at the foot of the mountains, the town is the starting point for a host of hiking trails. As soon as the first snow falls, strap on your snowshoes and make your mark on the trails that criss-cross the Pyrénées Ariégeoises. If you want to reach new heights, head for the Prat d’Albis for a paragliding session and a breathtaking view of the whole of the Ariège high mountains. Back in the medieval town, the castle on its rocky outcrop is a must-see and can be visited all year round.
