Finally, you’ll pass by the courtyard of the Hôtel d’Assézat and the charming streets of the Saint-Étienne district. The train brings you back to Place du Capitole. During this walk, you’ll admire the architectural heritage and trace its evolution: a bell on the façade of the iconic Capitole, a grocery shop that has become a local institution in a charming street, stories of porters and mules… The routes all lead to the most beautiful covered markets: Victor Hugo or Les Carmes. There, the second part of the adventure begins: meeting local food artisans—cheesemongers, caterers, and pastry chefs— who will delight your senses with irresistible tastings!

Discover one of Toulouse’s emblems: the violet. Introduced to France under Napoleon III, it has become one of the city’s symbols. Since 1985, the name “Violette de Toulouse” has been a registered trademark. Since 1993, La Maison de la Violette has developed around a hundred products inspired by the flower and is actively involved in preserving and promoting this unique regional heritage.
Located on an authentic 1930s barge moored along the Canal du Midi, La Maison de la Violette welcomes you for a tasting.

Set off to discover the must-sees of the city! On the Place du Capitole, your guide evokes a touch of antiquity before presenting the opulence of the judicial and commercial city of the 18th century, displayed on the impressive pink-andwhite façade!
Follow the Rue du Taur to the Saint-Sernin Basilica, a masterpiece of Romanesque art and a major stop on the pilgrimage route to Santiago de Compostela. Further on, visit the Church of the Jacobins, a noble brick nave and Gothic heart of the 13th and 14th centuries, where the memory of the Cathar heresy and the history of one of France’s oldest universities linger.
