Run by chef Quentin Pellestor-Veyrier and his partner Camille Hubert, the restaurant offers modern cuisine with deep roots in the Occitan region.
Its menu is a tribute to gastronomic traditions: from the South-West (foie gras, duck breast, veal from Ségala) to the Mediterranean (rouille sétoise, oysters from the Étang de Thau, black olives), all revisited with finesse and boldness.

Open from Tuesday to Saturday, the restaurant offers a range of menus, including a 5-course "halte déjeuner" menu, a 7-course "transhumance" menu and a 5-course "champêtre" menu. Finally, the restaurant has already been praised by Gault & Millau (3 toques, 16/20) for its creativity and technical mastery.
