Founded in 1874 as a bourgeois boarding house dedicated exclusively to the authentic cassoulet of Castelnaudary, Le Colombier is now a veritable institution in Toulouse. Its famous cassoulet, prepared to the same recipe for over a century, remains the house's flagship speciality. The restaurant welcomes its guests in a traditional, well-kept setting, and also offers an à l'ardoise menu at lunchtime, complemented by a menu of South-Western classics. Located in the heart of the town centre, Le Colombier is a safe bet with many long-standing regulars.
