Maison Pillon, which was taken over by the Dolfi family in 2017, is a true family business that enjoys and cultivates total independence. Parents and children alike have their hands in the pie, united by a shared passion: the pleasure of taste, a serious penchant for sweet things and a strong desire to protect ancestral know-how. The Dolfi family is at the head of an incomparable sweet heritage that, as the regions evolve, sketches out a contemporary map of France with a hint of yesteryear. All of this is done to the same rhythm as the historic establishments it has taken over (Au Négus in Nevers, Les Palets d'Or in Moulins, À la Mère de Famille in Paris...), preserving mythical recipes that are sometimes threatened with extinction.
