Set against the backdrop of the majestic Dôme de La Grave, this contemporary coffee shop has become one of the must-visit spots for speciality coffee lovers in Toulouse. Opened in 2025 by the team at Hayuco Coffee Roasters, a renowned Toulouse-based roaster, the café showcases exceptional coffees that are carefully sourced and then roasted on-site using a meticulous, artisanal approach. A meeting place where artisanal expertise, coffee culture and the Toulouse way of life come together, Copola appeals equally to coffee enthusiasts and passers-by looking for a gourmet break with views of the Garonne and the famous La Grave monument.

In a bright, minimalist setting that combines exposed concrete, terrazzo and large floor-to-ceiling windows offering one of the city’s most beautiful panoramic views, visitors can enjoy espressos, filter coffees and signature drinks prepared with precision. The venue also offers a creative menu for breakfast and lunch, developed in collaboration with chef Julien Lemboulas.
