About

René and Anne-Marie Pillon set up Maison Pillon in 1967 on the Place des Salins in Toulouse, based on their mutual professionalism. René, an artist and artisan pastry chef, was assisted by Anne-Marie, an outstanding shopkeeper and manager. Passionate, they devoted 34 years of their lives to making Maison Pillon a Toulouse institution.

In 2001 they decided to retire, handing over the business to Yves Thuriès (twice Meilleur Ouvrier de France) in partnership with Hugues Sallier.
Since then, the business has taken on a whole new dimension, with the addition of a central laboratory to serve the six gourmet outlets in the Toulouse region.

HACCP method. While preserving the artisanal aspect, Maison Pillon has become a structured and above all innovative company.
2017 will mark the 50th anniversary of Maison Pillon.
