Notre souhait est de faire vivre le chocolat au travers de la sculpture ou bien d’une ganache.
La chocolaterie atelier boutique « Les Galeries du CACAO FAGES » (galeries de sculptures en chocolat, salon à chocolat chaud) créée par Jérémy Fages, sculpteur chocolatier et Sylvain Fages, s’installe au cœur du quartier Saint-Cyprien, dans le centre-ville de TOULOUSE.

Friday afternoon adventuring paid off yesterday! We discovered #cacaofages, which may be our new favorite chocolate shop (shhh...don't tell the others). First, walking in to the shop feels like walking into an art gallery - except you're seeing huge, detailed chocolate sculptures instead of marble or plaster. The staff person who helped us told me that it takes 3 MONTHS to carve each sculpture (2-3 feet tall and similar width). The workroom is framed in glass windows, so you can take a seat at the counter and watch them making chocolates, marshmallows, or any number of other delicious treats while you order a hot chocolate. And speaking of the hot chocolate...you can also see it being made to order in the workroom. They serve very interesting and unique flavors that you can tell were carefully considered. We tried one that included and infusion of jasmine tea (I loved the floral aromas and flavors) and another that had cocoa nibs and smokey, peppery goodness (a ridiculously fantastic version of a Mexican hot chocolate). The chocolates in the case were so beautiful that we couldn't resist bringing a few home. Last night we tried a yuzu caramel and a gamache infused with vanilla bourbon. I'm fighting a losing battle to savor the rest, but - hey - "no preservatives" means that I really SHOULD eat them all now, right?
